Work and Purses

Life has been so crazy over the last couple of months, and even though one would think I have tons of time now to sit down and blog, it has been the complete opposite. As of right now, I am six months away from my wedding day, and have been working on that at full speed while juggling life at the marketing agency Black Koi 360.

Around August of last year, my boyfriend and I decided I should go independent and open an agency here in Mexico City. For the past few months we worked closely with a legal consulting agency creating all their corporate identity, and now remodeling their office. After that, we got hit up the biggest ornamental plant wholesaler in the country…and even though things were looking pretty good because of the size of the project, getting 83 associates to agree is taking longer than expected.

And as of last week, we got a call from Merida, Yucatan to fly in every month to rebuild the brand from the ground up. It’s one hell of a challenge, but it definitely has me excited. I leave this coming monday before the sun even comes up, and will be out till the end of the week.

So today, I headed over to Antara to get a few things that I needed for the trip (Bliss lemon+sage body wash, I love you!), I made one last stop before heading home. Since I moved to Mexico City I fell in love with Purificacion Garcia, and boy, they didn’t let me down today. Their new line is to die for with bright and bold colors and many new styles. Personally, I fell in love with a small long-strap purse that I knew would be perfect for Merida and moving around in the airports. When I went with Goose to another store so he could see it, we found this beauty and he bought it as an early birthday week.

It is tan with a hot pink flap which will go perfect with the bright wardrobe I’m putting together for the summer. Tomorrow I start packing my bag and prepare for the first of many trips to the Yucatan Peninsula.

Chocolate Cake with Blueberry Pomegranate Filling
we made this cake for my parents’ 25th wedding anniversary, but it’d be great for any holiday party. a chocolate cake is pretty average in the “baked goods” realm, as well as very rich, but the fruit makes it light and interesting. try it with a glass of red wine, it’s perfect after a big dinner!

the cake:
mix together 1 cup almond milk, 3/4 cup turbinado sugar, 1/3 cup canola oil, and 3 tsp red wine
into the liquid bowl, sift in 1 cup flour, 1/3 cup cocoa powder, 3/4 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/4 teaspoon salt
stir until smooth, then split the batter evenly into two greased 9” circular pans and bake at 350F for 10-15 minutes.

the filling:
take out the seeds of one pomegranate and place them in a plastic bag. smash them with something heavy until the hard seeds and the juice are separated. poke a few small holes into the bag and let the juice pour into a saucepan. (when smashing the seeds, make sure not to rip the bag. i used an extra bag on the outside.)
do the same with two small cartons (3-4 cups) of blueberries. throw out any bad berries, and put the rest in a plastic bag. smash them up until all of the berries are broken. add them to the saucepan.
stir in 2 tbsp corn starch, or your favorite thickener.
heat on medium low while your cake is baking, stirring occasionally. 

put it all together; spread it thick between the two cakes and drizzle on top. garnish with fresh blueberries and a dusting of organic powdered sugar. this feeds about 10 people. serve hot and on the same day as baked. enjoy!
